Baked Peanut Tofu
Ingredients
- 2 blocks extra-firm tofu
- Corn starch
- 1 cup peanut butter
- 5 garlic cloves
- 2 large spoonfulls tamarind paste
- 1/4 cup lime juice
- 1/2 cup soy sauce
- 2 Spoonfuls chili oil
- Spoonful of brown sugar
- Cardamom
- Cinnamon
- Peanuts
- Cilantro
Instructions
- Preheat oven to 425°
- Press tofu for 10-15 minutes
- Combine peanut butter, garlic, tamarind, lime juice, soy sauce, chili oil, brown sugar, cardamom, and cinnamon
- Slice tofu into small blocks and toss with corn starch and olive oil in a large bowl
- Spread on baking sheet and bake for 20 minutes. Tofu should start to brown
- Transfer the tofu back into the bowl and mix with half the peanut sauce
- Spread back on the baking sheet and bake for another 10 minutes. Sauce should start to dry out
- Transfer back into the bowl and mix with the remaining sauce
- Garnish with cliantro and lots of peanuts, serve over rice
