Baked Peanut Tofu

Ingredients

  • 2 blocks extra-firm tofu
  • Corn starch
  • 1 cup peanut butter
  • 5 garlic cloves
  • 2 large spoonfulls tamarind paste
  • 1/4 cup lime juice
  • 1/2 cup soy sauce
  • 2 Spoonfuls chili oil
  • Spoonful of brown sugar
  • Cardamom
  • Cinnamon
  • Peanuts
  • Cilantro

Instructions

  1. Preheat oven to 425°
  2. Press tofu for 10-15 minutes
  3. Combine peanut butter, garlic, tamarind, lime juice, soy sauce, chili oil, brown sugar, cardamom, and cinnamon
  4. Slice tofu into small blocks and toss with corn starch and olive oil in a large bowl
  5. Spread on baking sheet and bake for 20 minutes. Tofu should start to brown
  6. Transfer the tofu back into the bowl and mix with half the peanut sauce
  7. Spread back on the baking sheet and bake for another 10 minutes. Sauce should start to dry out
  8. Transfer back into the bowl and mix with the remaining sauce
  9. Garnish with cliantro and lots of peanuts, serve over rice
